The Anti-Dairy Challenge

If you follow me on FB or Twitter, you've probably seen that I've decided to purse a diet free of dairy products. Why? After much research and talking with others, its really not that needed in the modern diet. You might argue that I'll be missing out on vital calcium and vitamin D, but I can get that from other sources such as Spinach, Kale, etc and supplements if needed.

For the most part I decided to give up the cow for a few reasons:
-health: most dairy is pretty fattening, its not really needed in your diet, and others have told me they feel more energetic without it.
-Eventual veganism: by this point and time I've given up all meat except for fish and I still stick with that because I don't have a lot of time to cook tofu and other dishes properly. I plan on giving that up as well once I graduate grad school and have more time to devote to cooking good meals again.

So currently, I'm two weeks into this adventure and things seem to be going well. No cravings for cheese or milk or yogurt. A soy-substitute for yogurt has been tough to find in W.L., but that will make breakfast more enjoyable once I find it. Almond milk has proven to be a delicious replacement for milk- love it! I also need to experiment with making cheese substitutes for mac and cheese...it was one of my staple 'quick dinners' on nights when I only had 30 minutes for a meal.

Do I feel any more energetic or 'healthier'? I think it might be too early in the adventure to tell, honestly. Onward!
